At Levi’s Nek Farm, the young people are continuing their training by making the most of the farm’s produce through processing. After pickled peppers, they have made peach preserves in syrup.
This practice allows the harvest to be used over a longer period, avoiding losses associated with production peaks. It also offers the possibility of storing the fruit for longer whilst preserving its
flavour.
Becoming familiar with preservation techniques is also a way of generating new income for the farm whilst strengthening their food self-sufficiency.
