To ensure regular vegetable production throughout the year, it’s essential to maintain a continuously active nursery. Every week, new trays are sown, while others, having reached maturity, are released to join the growing beds. This regular rhythm not only ensures a constant supply of young plants, but also means that harvests of the same species can be spread out over the season. This organisation limits production peaks and optimises the use of the garden, avoiding surpluses that are difficult to dispose of.
