Transplanting spinach at Roosboom, South Africa

The Roosboom gardener and the two women in charge of the centre set about preparing the beds for transplanting the spinach produced in the greenhouse at the end of winter. The soil is extremely dry, winter being the rainiest season in southern Africa. The beds will be watered sparingly, and covered with a veil to protect them from the sun to limit evaporation and encourage the plants to take root.
